Olle Lundberg, a well-known San Francisco architect specializing in metals, designed the guest rooms with customized furnishings and monochromatic schemes. The cobalt-blue carpeting, which also runs throughout the hotel, is a reflection of a 1930s ocean liner. Sculpted-steel headboards fashioned after a wave are Olle’s signature. There are even Diva suites specially designed for children. Colibri Mexican Bistro combines the simplicity of authentic family recipes with fresh, high-quality ingredients to bring diners unparalleled, delectable Mexican cuisine in a charming, turn of the century cantina setting.
The darkly stained finish of the high-backed booths and glistening mahogany bar enhance the golden-rust sponged walls. This warm and inviting eatery is reminiscent of Mexico City restaurants of the 1900’s, decorated with classic Spanish paintings and accentuated by a vast collection of uniquely shaped and rare tequila bottles. Filled with energy, Colibri projects black and white 1940’s Latino-film clips at the front of the house, while the open kitchen in back provides glimpses of its colorful cuisine in different stages of completions. Boosting a knowledgeable staff and attentive, sociable management, Colibri is dedicated to providing a memorable dining experience for both tourist and locals alike. Originally from Cuernavaca, Mexico, owners Eduardo and Sylvia Rallo created Colibri Mexican Bistro out of their longing to find the authentic Central Mexican dishes they had grown up with. The restaurant features classic Mexican cuisine, blending rich flavors, textures and traditions from ancient Aztec and Mayan foods like chiles and corn with the unique blending of Spanish and French influences.
The menu boasts a variety of family recipes, utilizing innovative ingredients, most served as small plate-tapas style. The restaurant is committed to building each dish from scratch and using authentic ingredients. Highlights include fresh Guacamole, prepared tableside, accompanied by soft hand-made corn tortillas instead of tortilla chips. Ceviche and a refreshing Jicama salad, with avocado, citrus wedges, cilantro and a chile piquin dressing are just two of the many-featured dishes that will awaken your taste buds. Classic sauces like ancient moles, and a creamy guajillo chile sauce, and flavors like epazote, the distinctive Mexican herb, play a huge part in accentuating every dish. The bar also boasts mouthwatering drinks such as sangria, mojitos and classic tequila cocktails infused with fresh fruit. And of course, save room to indulge in Colibri’s desserts such as crepes with cajeta (caramel) or their famous warm chocolate cake.
